- 1 large carrot
- 1 large russet potato
- 1 large yam
- 1/4 cup olive oil
- 1/4 tsp salt & pepper
- 1/4 tsp ground nutmeg
- 1/2 cup toasted pecans
- 1/4 cup maple syrup
Ingredients

- Pre-heat oven 350°F
- Peel and cut carrot, potato, and yam into 1-inch pieces
- In a large bowl, stir the olive oil, salt, pepper and nutmeg until combined. Add the vegetables and toss to coat.
- Place the vegetables in a roasting pan and roast 25 minutes
- Remove from oven increase oven temperature to 425°F
- Stir in pecans and syrup and replace roasting pan in oven for a further 25-30 minutes.
