Ingredients

olive oil

ground nutmeg

toasted pecans
1/4
cup
maple syrup
Instructions
Pre-heat oven 350°F
Peel and cut carrot, potato, and yam into 1-inch pieces
In a large bowl, stir the olive oil, salt, pepper and nutmeg until combined. Add the vegetables and toss to coat.
Place the vegetables in a roasting pan and roast 25 minutes
Remove from oven increase oven temperature to 425°F
Stir in pecans and syrup and replace roasting pan in oven for a further 25-30 minutes.
