Melons are usually abundant and sweet now. I developed a melon lassi recipe for a summer fund raiser. It’s based on the classic Indian mango lassi. If you are unfamiliar with lassi drink, it’s kind of like a creamy smoothie with fresh fruit, a bit of yogurt and sweetened with honey. Chef-K‘s Melon Lassi Recipe is a treat your family will enjoy.

Melon Lassi Recipe
Serves 4
Ingredients
- 1 1/4 cups plain yogurt
- 1/2 tsp lemon juice
- 1/2 cup fresh melon flesh (cantaloupe, watermelon, honeydew melon, mango pulp, or other fruit can be used)
- 1/3 cup cold water
- 2 Tbsp honey
- 9-10 standard ice cubes
Directions
- Blend all ingredients except for the ice cubes in a blender, until the honey is dissolved.
- Add ice cubes and blend until frothy
- Pour into 4 glasses and enjoy immediately!
